Cornbread

This classic from the deep south of the USA is a great side dish or as part of a lunch

Ingredients.

•50g Butter

•120g cornmeal

•70g plain flour

•½ tbsp. sugar

•1 tsp baking powder

•Pinch of salt

•140ml milk with a squeeze of lemon juice

  • Jalapenos (optional)

Method

Preheat the oven to 200c

Weigh each ingredient in one bowl and add to one other bowl ready for mixing

Add a squeeze of lemon juice to the milk

Mix the lemon juice with the dry ingredients

Divide equally between the moulds

Bake until cooked, check like you would a cake

Cornbread is up there with apple pie as an American classic and with so many variations you can get really creative
