Risotto

INGREDIENTS:

-1 Onion

-1 Clove garlic

-100g Risotto risotto

-500ml stock

-30g Parmesan Cheese

-Herbs: basil, rosemary, thyme, oregano. Either one or a combination

OPTIONAL:

Risotto is from the cooking idea of cuccina povera. Which is 'poor cooking' As such it takes in low cost ingredients and makes the best of them and leftovers are used in dishes such as risotto.

- Mushrooms

-Chicken

-Bacon

-Peas

METHOD:

Mise en place:

-Fine dice onion.

-Mince the garlic

-Make up stock

-Weigh rice

-Grate cheese

1) Sweat the onion in olive oil until translucent

 

2) Add garlic and cook for 1 minute, avoid the garlic going brown

 

3) Add rice to the pan on a low heat coating in the oil for under a minute, stirring to avoid browning the rice

 

4) Gradually add the stock, stirring continuously. After the rice has absorbed the stock continue adding until the the rice is cooked or all the stock is used. If all the stock is used but the rice is not cooked, use water to complete the cooking.

5) Turn off the heat and add the herbs and cheese, stir to melt in and transfer to your container or plate.
