Ingredients: Curry in a hurry
•1 onion
•Ginger small piece.
•Garlic x 2 cloves
•Fresh chilli x1
•Cumin seeds, pinch
•Cardamom x2-3
Tin of chickpeas (rinsed)
1 tbsp curry paste
1 tin of chopped tomatoes
1 tin of coconut milk

Drain chickpeas and set aside

Prepare onion

Sweat onion until soft and translucent

Add spices, curry paste, and cook until fragrant

Add the chickpeas, chopped tomatoes and simmer

Wilt the spinach
