Ingredients: Curry in a hurry

•1 onion

•Ginger small piece.

•Garlic x 2 cloves

•Fresh chilli x1

•Cumin seeds, pinch

•Cardamom  x2-3

Tin of chickpeas (rinsed)

1 tbsp curry paste

1 tin of chopped tomatoes

1 tin of coconut milk

Ingredients: Curry in a hurry
  • Drain chickpeas and set aside

  • Prepare onion

  • Sweat onion until soft and translucent

  • Add spices, curry paste, and cook until fragrant

  • Add the chickpeas, chopped tomatoes and simmer

  • Wilt the spinach
